Controlled Quality (QC) meats are obtained from agnelloni (young mutton) and castrati (castrated male sheep), both traditional products of local farming heritage, today raised according to a strict Production Specification with precise rules.
For agnellone, the animals must be between 70 and 180 days old, with a live weight between 25 and 50 kg. The meat must have a pink to dark pink color. The fat should be white or cream-white, without any yellowish tinge.
For castrato, the slaughter age ranges from 5 to 12 months, with a live weight between 40 and 100 kg. The meat must have a dark pink color, without abnormal hues. As with agnellone, the fat must be white or cream-white, without tending towards yellow.
The Emilia-Romagna Region has created the QC label to certify agri-food products obtained in the regional territory through integrated production techniques that respect both health and the environment. Products marked with the Qualità Controllata brand guarantee consumers that compliance with defined quality standards—set out in specific production regulations—is ensured by adequate controls. In this case, the guarantee also extends to the next stages of production and farming, namely the operations of preservation and processing of the raw material.
