Ingredients and Preparation
- 1 kg flour
- 50 g brewer’s yeast
- 25 g salt
- lukewarm water or milk
- lard or oil for frying
Dissolve the yeast in a little lukewarm water. On a pastry board, arrange the flour in a mound with a well in the center and pour in the dissolved yeast and salt. Knead well with milk and water until you obtain an elastic dough. Let it rise for a few hours. Roll out into a sheet, cut into diamond shapes, and fry in plenty of lard or oil.
Serve hot with cured meats and cheeses.
In the past, fried piadina was made using bread dough.
