The Oil and its territory
Brisighella boasts one of the most remarkable olive-growing traditions in Northern Italy. Here, thanks to the unique microclimate of the valley—protected by the Vena del Gesso and its gentle hills—olive trees have found ideal conditions. This is an ancient tradition dating back to Roman times, which still today strongly defines the landscape.
From the mill of the Brisighella Agricultural Cooperative comes over 90% of the locally produced oil certified with the Protected Designation of Origin (PDO) label.
The Excellences of Brisighella
Brisighella PDO extra virgin olive oil
Green-yellow in color, with floral aromas and a bold taste, slightly pungent and pleasantly bitter. Excellent raw on vegetables, grains, soups, and main courses.
Brisighello
An extra virgin olive oil made from carefully selected olives of the Nostrana di Brisighella variety. With an intense green color, broad aroma, and almond-like flavor, it pairs perfectly with fish dishes. Production is limited to about 5,000 bottles a year.
Nobildrupa
An extra virgin olive oil obtained from the Ghiacciola cultivar, found only in a few olive groves in the area. Bright green in color, with a fruity aroma and a delicate, slightly bitter taste: ideal for Mediterranean and rustic cuisine.
