The name Squacquerone identifies a fresh cheese with a texture that “melts” due to its high water content. It is one of the best-known and most common fresh cheeses of Romagna.

It is a soft, cow’s milk cheese made from whole milk, with no well-defined shape.

Its slightly tangy flavor recalls the taste of fresh milk. It pairs beautifully with arugula and Romagna piadina. It is also excellent with caramelized figs or acacia honey.
