It is a delicate, harmonious wine with herbaceous notes, with a minimum alcohol content of 10.5% in the dry version and 11% in the medium-sweet version. It is best appreciated fresh and young, served at a temperature between 10 and 12°C.

Historical Origins
The name Pagadebit already tells its story: this grape variety is extremely fertile and resilient, capable of yielding fruit even in difficult vintages. Thanks to these robust grapes, farmers could rely on a secure harvest, sufficient to “pay the debts” incurred in the previous year. Widespread under various synonyms throughout Central and Southern Italy, it was long rarely vinified on its own, as it was considered too “heavy” for the market. In Romagna, however, it found its true identity: a fresh, genuine wine, tied to the concreteness of the land.
